Editorial reviews from the web (3)

Proving that "gourmet American cheese" is not an oxymoron, this "upscale", tri-level Flatiron "outpost of the Seattle favorite" offers an "unbeatable selection" of "fabulous" domestic "artisanal" fromages, including those "you can see them making" in-house before they travel to a downstairs aging cave; the goods can be on the "pricey" side, but to most it's "oh-so-worth-it" when you factor in...

For years, Seattle’s answer to our wonderful cheese shops has been Pike Place Market’s Beecher’s Handmade Cheese, but now we have it too. The first floor is full of artisan charcuterie and homemade cheeses, and the upstairs café is home to their famous macaroni and cheese and delectable grilled cheese sandwiches. But you’ll want to head downstairs to the Cellar; it’s there that you’ll find their famous grilled cheese martini.

Beecher's, which handmakes its own cheese, is also a purveyor of Mast Brothers chocolate and McClure's pickle chips. Try a delicious cheesy sandwich from the deli upstairs or head downstairs for a strong cocktail and a plate of mac and cheese.

I am so tickled to have stumbled upon beecher's and there cellar today. Best cheese plate and pairing I've had the pleasure to enjoy. Also, your chef is bar none, came out to teach me about your specialty pickles. The only thing that would have made the time better would be running into Ina & Jeffrey there.

The notorious mac and cheese was decent but hardly the world's best of its kind.
