Ryan Skeen has become the corporate chef for the company that opened the Turkish grill restaurant Pera in Midtown five years ago. He is concentrating on the food in this big sibling, with sleek décor and a large garden. Pistachio-crusted snapper, duck breast wrapped in cabbage and manti dumplings with wild mushrooms and field spinach will be on the menu.
