Having lived in NYC for several years, I became accustomed to eating at noodle bars. After moving to the South, I was disappointed to find a lack of them here. Thankfully I found Umaido. Of the broth selections, the regular “tonkotsu” is a traditional broth made from pork bones. A wonderfully rich but beautifully thin broth, it’s the hardest to master and should be ordered.
