I have an inexpensive stainless but high carbon content (I can easily sharpen) and it is light and it is my favorite kitchen knife for precision or fine slicing. I holds a sharp edge really well and I can dress and sharpen it every month to keep it razor sharp. Many of my newer knives have such hard steel that I send them out for sharpening - but not my favorite Robinson.
