Fresh-baked bagels and breads made with fine ingredients, then stuffed, wrapped and topped. Einstein Bros offers bagel-like pastries which they have to suit modern tastes. Traditional bagels are too squishy to make sandwiches, so Einstein's are stiffer for sandwich use. Whereas traditional bagels were large and fluffy, Einstein's pastries are small and chewy.
